Rave unde / Rava laddu / Semolina laddu or sweets

Rave Unde / Rava laddu is a very easy sweet recipe which can be made in the last minute for any occasion. Reason : It's made with almost ever-available ingredients in any Indian household pantry. Very few ingredients and 20 minutes time is all needed to make these delicious laddus. So let's hop in to the recipe.

Ingredients :

  1. Chiroti rava / Fine semolina - 1 cup
  2. Sugar - 3/4 cup
  3. Coconut - 1/4 cup ( Frozen / dessicated) 
  4. Milk - 1/4 cup
  5. Cardamom powder - of  3-4 cardamoms
  6. Raisins and cashews - few ( for garnishing)
  7. Ghee - 1 tbsp
Serves : makes 15 medium sized Rava laddus

Making Rave unde / Rava laddus :

  1. Dry roast the Rava / Semolina ( in low flame ) in a thick bottomed vessel. Add the raisins while roasting.
  2. Meanwhile, in another vessel, add the sugar, coconut, and cardamom powder. 
  3. Heat the milk until it starts boiling.
  4. Once the rava is roasted, the raisins swell up to their maximum. Immediately transfer the roasted rava into the vessel containing sugar and mix well.
  5. Pour in little of the boiling milk slowly, into the rava mixture and mix. Do not add everything at once. Add the milk, simultaneously mixing it well, until the mixture turns into a little hard mass. 
  6. Leave it for just a minute to cool a bit. 
  7. Then apply some ghee to your palms and start making laddus, when the mixture is still hot. Be careful not to burn your hands.
  8. If the mixture gets dry ( as semolina absorbs the milk and it becomes difficult to make laddus), add little boiling milk and mix again. Then make laddus out of it.
  9. After making all laddus, garnish each with a cashew on top. 
  10. Let the laddus cool for half an hour and enjoy them with friends and family..
